Alan Coxon's delicious Chinese recipes

With the Chinese New Year on it's way, Alan Coxon brings you two wonderful Chinese recipes - Quick Stir Fried Vegetables and Sweet and Sour Rice.
Quick Stir Fried Vegetables
Serves 4
2 tsp sesame oil
1 onion [finely sliced]
2 cloves garlic [sliced lengthways]
2 tsp fish sauce (nam pla)
1 tblsp Alan Coxon`s “Ancient Greek” Vinaigre
100g broccoli florets (small)
100g mange touts [sliced lengthways]
100g baby sweetcorn [sliced diagonally]
100g fine bean [sliced lengthways]
100g spring onions [sliced lengthways]
Method
1. In a wok, heat oil until very hot…..then carefully add the onions, garlic and stir fry
2. Add the vegetables and stir fry quickly, leaving them firm and crisp to the bite
3. Add the fish sauce , and Ancient Greek Vinaigre , bring quickly to boil and stir / toss well.
4. Serve immediately
Sweet and Sour Rice
Serves 4-6
Ingredients
450 g Jasmine rice
750ml (3 cups) cold water or chicken or vegetable stock
100ml natural yoghurt
50g butter
1 tblsp clear honey
Juice and zest of one lime
Salt and pepper
Method
1. Rinse the rice thoroughly to remove any starch around the rice
2. Place the butter into a heavy based saucepan and add the rice and stir thoroughly, add the water or stock and stir once only
3. Bring to the boil un covered, over medium heat
4. Reduce the heat to simmer and cook for 12 mins but do not stir the rice at any point !
5. When ready all the water should have been absorbed and evaporated, remove from heat and cover with a lid to rest for a couple of mins, just before serving, add all the remaining ingredients and stir well ….your sweet and sour fragrant rice is now ready to serve
This can be served both hot or cold
