Great meals for under £5!

Aussie mum and co-founder of 4 Ingredients, Kim McCosker, joined us to share the secrets of great family meals for under £5 per head.
Along with her best pal Rachael Bermingham, Kim brought out a cookbook to make home cooking simple for busy mums, in which each recipe used four or less ingredients.
She told us that the idea is to make cooking so simple that it encourages busy mums to get back in the kitchen – but it could save money too!

With many of us looking for a cheap meal, and processed foods often seeming cheaper than home cooking, Kim is keen to show that it can be done.

Chicken Pie
Ingredients
Serves 4 - 6
2 sheets puff pastry (81p for 500g)
400g can condensed cream of chicken soup (Batchelors Condensed Cream Of Chicken Soup 295g x 2 74p)
½ cooked chicken without skin, cubed (£3.24)
500g frozen mixed veges, thawed (£1)
Total: £5.79
Price per serving: £1.45
Method
Preheat oven 180C. Line a non-stick pie dish with first sheet of pastry. Combine remaining ingredients in a bowl, season with sea salt and pepper and pour into pastry Cover with remaining sheet, seal edges well by pressing with a fork. Cut several slits in the pielid and bake for 30 minutes, or until lid is golden brown.
Optional: Brush with beaten egg or milk for a very presentable finish.
